How do I tag this?

Nothing on post #7797352 should be tagged horse girl, they don't have human faces. If it's bipedal and has a human face + animal characteristics (tail, ears) it's a _girl. If it has animal characteristics and a nonhuman face, it's a furry. If it's not bipedal, it's an animal/creature/monster in most cases (although this one is more of a grey area)

Furries are usually tagged *_girl or *_boy, though...?

furry *_girl - 947 pages
furry *_boy - 765 pages

Since they're not supposed to be tagged as the animal.

Yeah, here's something annoying: characters have to be humanoid in order to qualify for character counters. So the correct tag here is no humans, not 6+girls + 1boy.

Tbh, I really wish we had a character count for non-humanoid characters (even if it's just 1creature and so on), as opposed to just using no humans as a dumptag for that. Just looking at no humans, it's a hodgepodge of named nonhumanoid characters and various food art and creature art. It'd be great to have more functional searchability in that way, as opposed to just throwing it all into no humans, even with tags like animal focus and food focus to make things easier.

evazion just modified horse_girl to exclude anthro and humanoids. (other animal_boy/_girls should be modified accordingly. I wish for a transclusion feature on danbooru wiki)

6+girls (and the other character quantifiers) still claim that posts like post #7797352 should be tagged. Are they characters in common english? Yes. Are they characters in danbooru language? Yes. Then tag :CatJam: I've put back 6+girls and 1boy.

So on post #7797352 there are 2 furry girls, rainbow dash and fluttershy, and the rest are pony_(animal)?

Am I really going to have to be the one to point out that we have sentient objects as chartags (ex: Raising Heart)? Because we do, and by your logic, they should be tagged with charcounts (which no).

Also, quit dragging this out and trying to start an argument. If anything, you are the one encouraging vandalism here. What me and others have told you is pretty much the standard around here. It's not up for vote or anything, that's literally what probably anyone not new here would've told you. Not to mention that the people you claim are "for" your position probably aren't even. Heartcatcher is new here and didn't know, gfz was pointing out pretty much exactly what everyone telling you otherwise was saying, and the people who edited that wiki (which includes evazion for the record) sure as hell would not be thrilled to hear you trying to twist their words around to fit your needs. If you see charcounts being applied to things like horses, the answer is to fix them as they are wrong.

This is not a vote, it's a discussion. And honestly it might be deserving of its own thread at this point. For what it's worth, in my opinion if something is a main character of its work, it probably deserves to get counter tags. I don't see why we would have a pointless restriction like "only bipedal characters should count". I don't think anybody would want to exclude centaur girls, so that rule wouldn't work in the first place.

In the case of MLP like post #7797352, I think there's significant utility in counter tags. These are the protagonists of the show and the main focus of most of the drawings. They're anthropomorphized to a degree that they basically act and function like humans. They should have counters.

Edit: One more thing, @reg_panda please be mindful of what Knowledge Seeker wrote above. Absolutely do not put words in my mouth, if I want to say something I'll say it myself. I am not on anyone's side, I'm just expressing my thoughts.
