Sheepy's parents are alive and well and she doesn't seem unhappy around them. The sole reason she's at convent is to be with Froggy.
I can imagine her parents had a long talk about how sheep-not-nun-yet needing to grow up around other kids, and whether it would be a better environment than they could give her on the farm
