A popular Eastern Mediterranean dish. It features meat cooked on a vertical rotisserie, slowly turning and creating crispy, flavorful layers. The meat is shaved off as it cooks, and typically served with warm pita bread (or another type of flatbread) wrapped around it with fresh vegetables and a creamy sauce, like tzatziki.
Most well-known in the West by its Greek name, 'gyros', which is a translation of the Turkish 'döner', while in Turkey, it is known as 'dürüm kebab', referring to the rolled-up nature of the wrap; otherwise also referred to as 'shawarma', or even just 'kebab'.
