良い方に変わるかダメな方に変わるかも銘柄次第なので、初見は本気でギャンブルですね。
うちは、二人で四合瓶のお酒を4日くらいかけて飲むので、その変化も楽しんでます。
もちろんコップに注いだら即冷蔵庫です。

It feels like the change starts from the instant you break the seal. Whether the taste improves or gets worse depends on the brand, so it's a major gamble when you first see it. Sanae-san and I drank a 4-pack of sake over the course of four days, so we enjoyed the changes in flavor as well. We'd immediately put the bottle in fridge after pouring some into a glass, of course.
