So, as you guys might already know, one loses one upload slot after each of three deletions. So what happens if I appeal my deleted posts and succeed in doing so? Do I gain my slots back?

Yes
eg. A new user has 15 max upload slots. They upload 3 images, which are deleted. The user now has max 14 upload slots. If those 3 images are undeleted, the user goes back up to 15 max upload slots.
However you can also increase your max upload slots over time as other uploads are approved, there's a little more detail about the upload limits here

Hope the thread's not too old to ask, but what about older (more than a month, once it stops showing how many approvers reviewed it) deleted posts getting undeleted? If three deletions undo 10 approvals when you're at 15 upload slots, then one deletion is undoing three or four approvals. And I'm assuming it's dynamic, so at higher upload slots one deletion undoes more approvals. But I feel like I've noticed getting old uploads undeleted only counts as one approval instead of it returning the multiple approvals it originally took away, is that correct?
