rename persian_(animal) -> persian_cat

it's not a separate species, just a breed of cats

Why the parentheses? Other breeds don't need them: see siamese_cat and norwegian_forest_cat. Shouldn't it just be persian_cat?

There's also Persian the Pokemon.
