5 years is already a long time in Vtubing circle IMO. Anyone who goes beyond that number (and is still thriving, even) is in a league of its own.
People just want to point fingers and blame someone, it was the same with Shion and Mumei, people ignoring them mentioning health issues and going straight into "Company = Evil"
Some just forget that in Japan had an actual "Black Company" exist that they way they treat employees is as worse than treating slaves. But regardless, people nowdays don't know how bad things this people work for. Especially that being a voice actor is not something an "easy work money"

that goes beyond Vtubers, and applies to pretty much all content creating in general. Staying on the content creation grind is stressful and burnout is extremely common even among successful entertainers.

Arguably, I find only the hawaii pizza to be good (when done with actual ham and pineapple instead of cheap canned fruit and luncheon meat).
But aside from what is good/tasty and what is not, the joke here is that Italian food is so popular worldwide it saw multiple changes, and some of them are made with cheap replacements. Spaghetti? Use ketchup and meat surrogate, then pretend it's still Italian. Ice Cafe Americano? Cool name for espresso with cold water. Korean carbonara? a blob of noodles with milk and pieces of chicken breast on top. It has nothing to do with original food, yet pretends to be it for higher appeal. Think of it in terms of one's cultural identity and bootlegged brands.
Bottom line is that it's a normal phenomenon, but also can be upsetting to see your culture being marketed that way.

We don't even know the exact reason she is leaving. Blaming the company, although they most likely have something to do, is useless.
There is a reason anger is one of the stages of grief. Looking to blame something to vent your frustration on a situation beyond one's control is natural. In this case the easiest target is the company, but even if there were zero targets to vent on people would still vent their anger on someone or something else no matter how deserving of it they are.

Unless some massive bombshell comes out clearly indicating that Cover is indeed a black company, I want to give them the benefit of the doubt; Calli said it best, some people are happy with the changes, others aren't, it's impossible to make everyone happy.
As Gura said, all of the attention made her physically sick, she didn't want to be the face of Vtubing; she had too much talent and didn't have the ego or mentality to coast on it. Gura said she is very shy and a massive introvert, it must have taken so much out of her to put herself in front of so many people every stream and to sing on stage, her popularity exploded far beyond what anyone could have imagined and she wasn't ready for it.
As much as it pains me to see her go, I just want her to have the best life she can get; I'm really going to miss her amazing singing and her adorable antics.
