Bruh the only hard boss in base game ER is malenia. And yeah while absolutely she falls into all the categories the artist listed, every other boss has those mechanics except toned down by like a hundred. They’re nowhere near as fast, combo’y, (except for maliketh but he has like no health) or have self heal like malenia. That’s what made her so infamous. Giving a 3/10 rating for a game because of a single optional boss is kinda ridiculous.

Not to mention how insanely satisfying it is to finally get your opponents moveset down and dodge everything they throw at you. The latter half of my attempts at Malenia I managed to pass through phase 1 while taking no damage at all, no matter what she threw at me. I mean you can literally run away from some of her attacks, you don't even need to dodge them. If you know what you're doing, even Waterfowl dance becomes trivial to dodge.
4 things: High vigor, High DMG, Ironjar aromatic, Endure. Endure is a way OP skill and ye get it at the start in the warmaster's shack. With a build of such things most bosses become trivial, you can even better it and add bleed or other stuff as seen with this example below:

Pretty sure using the only boss where that's a major issue, and saying the game go from 3 to 9 over just the dodging mechanic is just typical "comedic bad faith exaggerating". The actual point is just the artist don't like dodging and prefer parrying. Personally, from what little I have played of both game, I've found ER good.

So basically they're left nameless and are generically referred as just the "Makai Residents". I'll name them "Pixie" and "Demonica" instead (like how I name the jacket girl "Jackie" and the label girl "Labelle").
I have no idea too. No one of minor characters on Touhou wiki seems to have similar design.
