As far as I can tell, its a result of hitting save multiple times because the first click doesn't immediately respond

Yeah, just normal charro outfits for Senshi and Chilchuk, but also some differences: Senshi is using a working outfit, historically used by hacienda workers, or rurales (a type of irregular rural militia), mostly because the lack of metallic buttons and clothing accesories.
In this, Marcille is using Jalisco's traditional dress, but a contemporaneous one (after the Mexican Revolution (1910-onwards)). I'd really love to see Fallin using the women's charro outfit, since the long and tight skirt is so amazing to see, but this one (a mariachi variant), is also nice.

Basically: 6-6-6 = a triple, instant win 2-1-2 = pair plus the odd die as the point value, 1 is instant loss in this case, 6 is instant win, anything in between is good for banker because player must roll either instant win or higher point to beat the banker. 1-1-1 = a triple, instant win 1-3-5 = indeterminate outcome, must reroll.

The other two are charro outfits. The darker one is the most sumptuous and luxurious, nowadays used by mariachi singers. The lighter one is a mix between the simple and traditional outfit, used in charrerías (livestock herding made into a sport) and the chinaco "uniform", a type of light cavarly, mostly for the cape, but it's not something that I've seen in a charro suit.
