If a lot of people like or favorite a post, do the approvers take that into account when deciding whether to approve an appeal? Or is it just based on approver opinion? Just looking for some insight on how it works as someone new to uploading

Not really, we just look at the picture and if we like it we approve it, otherwise we don't. The amount of active approvers make sure that there's a wide enough distribution of tastes that good posts typically are approved without an issue.
Source (or rather, lack thereof) also influences approval chance.

Do you mean specific sources are more likely to be approved? Like the artist's official twitter/pixiv would be held in higher regard than a third party upload like e-hentai or something?

I meant that an empty source usually gives a post much lower chances of getting approved.
e-hentai is an accepted source, due to the amount of scans that come from there, so it won't usually influence approval chances.
Also while from the point of view of the moderation queue appeals are treated like any other pending post, you should keep in mind the bold warning shown in help:appeal_notice about disapprovals (it's also shown when you open the form to appeal a post).

I should mention that while it is an accepted source, if you can find the same image on the artist's twitter or other sites, it's very much preferable. e-hentai hosts a lot of paid reward dumps, so you gotta be suspicious of very high res/filesize versions on there if it's also publically posted by the artist elsewhere.
