The bar is called "Quindecim", so I think there is a clear etymological basis for the spellings (well, looks like the proper pronunciation for the Latin number is クィーンデキム and not クイーンデキム as the show uses, but still close enough to think that's what's intended). Mayu's full name can be seen on the official Japanese website
It follows the naming scheme for characters. The main characters are stationed at Quindecim (located on the 15th, revealed in episode 7, the bar's name is also in the OP and reads Quindecim), which apparently follows latin with quin = 5 and decim = 10 and together means 15. Decim was given his name as he's being sent to Quindecim to replace the previous attendant, who is Quin.
Following through with that, other characters have similar naming. Ginti is assigned to the 20th floor (20 = Viginti) and Nona is on the 90th floor (90 = Nonaginta). Clavis controls the elevator, and Clavis is latin for key.
